  • 1 cup sago pearls
  • 2 cups water (for cooking sago)
  • 1 cup full-fat coconut milk
  • 1/4 cup granulated sugar (adjust to taste)
  • 2 cups fresh strawberries, hulled and sliced

Instructions

  1. Soak the sago pearls in water for at least 30 minutes.
  2. In a pot, bring 2 cups of water to a rolling boil. Add the soaked sago pearls and cook until translucent, about 10-15 minutes. Stir occasionally to prevent sticking.
  3. Drain and rinse the cooked sago under cold water to remove excess starch.
  4. In another saucepan, combine coconut milk and sugar over low heat until the sugar dissolves.
  5. Gently fold the cooked sago into the coconut mixture and simmer on low for about 5 minutes.
  6. Prepare the strawberries while the mixture cools slightly.
  7. Layer the sago mixture with fresh strawberries in serving bowls or glasses.
  8. Chill in the fridge for at least 30 minutes before serving.
