Description

Mandarin Orange Salad is a refreshing burst of flavor, combining sweet mandarins, crunchy almonds, and zesty dressing. This vibrant dish is perfect for any occasion.


Ingredients

  • 2 cups fresh mandarin oranges, peeled and segmented
  • 4 cups mixed greens (arugula and spinach)
  • 1/2 cup sliced almonds, toasted
  • 1/4 cup red onion, thinly sliced
  • 1/3 cup feta cheese, crumbled
  • 2 tbsp balsamic vinegar
  • 2 tbsp extra virgin olive oil
  • 1 tsp honey
  • Salt and pepper to taste

Instructions

  1. Wash and dry the mixed greens thoroughly.
  2. Peel and segment the mandarins, reserving some juice.
  3. In a large bowl, combine mixed greens, mandarin segments, sliced red onion, and toasted almonds.
  4. In a small bowl, whisk together balsamic vinegar, olive oil, honey, salt, and pepper until well combined; drizzle over the salad just before serving.
