  • 2 tbsp sweetened rice vinegar
  • 1 tbsp toasted sesame oil
  • 3 green onions, chopped
  • 2 tbsp toasted sesame seeds (for garnish)

Instructions

  1. Prepare all ingredients: chop cucumbers, dice avocado, and shred carrots.
  2. In a large bowl, combine sliced cucumbers, shredded carrots, diced avocado, and chopped green onions. Toss gently.
  3. Fold in the cooled sushi rice until evenly mixed.
  4. In a separate bowl, whisk together soy sauce, rice vinegar, sesame oil, salt, and pepper.
