  • 4 thick-cut pork chops (1 inch thick)
  • 2 tablespoons olive oil
  • 4 cloves garlic (minced)
  • 1 tablespoon fresh rosemary (chopped)
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly cracked black pepper
  • Juice of 1 lemon

Instructions

  1. Pat pork chops dry with paper towels; season both sides with salt and pepper.
  2. Heat olive oil in a large skillet over medium-high heat until shimmering. Sear the chops for 4-5 minutes until browned.
  3. Flip the chops, adding minced garlic and rosemary; sauté until fragrant (about 1 minute).
  4. Transfer the skillet to a preheated oven at 375°F (190°C) and roast for 15-20 minutes until the internal temperature reaches 145°F (63°C).
  5. Remove from oven, squeeze lemon juice over each chop, and let them rest for 5 minutes before serving.
