- 1 whole chicken (4–5 pounds)
- 2 tbsp extra virgin olive oil
- 2 sprigs fresh thyme
- 2 sprigs fresh rosemary
- 1 whole garlic bulb, unpeeled
- 2 lemons, halved
- 2 tsp salt
- 1 tsp black pepper
Instructions
- Preheat your oven to 425°F (220°C).
- Rinse the chicken under cold water and pat it dry with paper towels.
- Drizzle olive oil over the chicken, seasoning generously with salt and pepper inside and out.
- Stuff the cavity with halved lemons, garlic cloves, thyme, and rosemary.
- Place the chicken breast-side up in a roasting pan and bake for about 1 hour and 15 minutes or until a meat thermometer reads 165°F (75°C) in the thickest part of the thigh.
- Let rest for 10-15 minutes before carving.
