Description

Indulge in succulent oven-roasted chicken with crispy skin and tender meat, perfect for family gatherings or cozy weeknight dinners.


Ingredients

  • 1 whole chicken (45 pounds)
  • 2 tbsp extra virgin olive oil
  • 2 sprigs fresh thyme
  • 2 sprigs fresh rosemary
  • 1 whole garlic bulb, unpeeled
  • 2 lemons, halved
  • 2 tsp salt
  • 1 tsp black pepper

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Rinse the chicken under cold water and pat it dry with paper towels.
  3. Drizzle olive oil over the chicken, seasoning generously with salt and pepper inside and out.
  4. Stuff the cavity with halved lemons, garlic cloves, thyme, and rosemary.
  5. Place the chicken breast-side up in a roasting pan and bake for about 1 hour and 15 minutes or until a meat thermometer reads 165°F (75°C) in the thickest part of the thigh.
  6. Let rest for 10-15 minutes before carving.
