  • 2 lbs chuck roast
  • 4 dried guajillo chiles
  • 1 large sweet onion, chopped
  • 4 cloves garlic, whole
  • 1 cup fresh cilantro, chopped (for garnish)
  • 2 limes, juiced (for garnish)
  • 4 cups low-sodium beef broth
  • 2 bay leaves
  • 2 tsp ground cumin
  • 1 tsp Mexican oregano

Instructions

  1. Cut the chuck roast into large chunks and brown them in a pot over medium-high heat until crusted.
  2. In a blender, combine soaked guajillo chiles, onions, garlic, cumin powder, and half of the beef broth until smooth.
  3. Pour the sauce over the browned meat in the pot. Add bay leaves and remaining broth; cover tightly.
  4. Simmer on low heat for about 3-4 hours until meat is tender.
  5. Shred the beef with two forks and return it to the pot to absorb flavors.
  6. Warm corn tortillas on a skillet; fill each tortilla with shredded beef mixture and fold.
  7. Serve with small bowls of consomme for dipping, garnished with cilantro and lime.
