Ingredients
- 2 lbs chuck roast
- 4 dried guajillo chiles
- 1 large sweet onion, chopped
- 4 cloves garlic, whole
- 1 cup fresh cilantro, chopped (for garnish)
- 2 limes, juiced (for garnish)
- 4 cups low-sodium beef broth
- 2 bay leaves
- 2 tsp ground cumin
- 1 tsp Mexican oregano
Instructions
- Cut the chuck roast into large chunks and brown them in a pot over medium-high heat until crusted.
- In a blender, combine soaked guajillo chiles, onions, garlic, cumin powder, and half of the beef broth until smooth.
- Pour the sauce over the browned meat in the pot. Add bay leaves and remaining broth; cover tightly.
- Simmer on low heat for about 3-4 hours until meat is tender.
- Shred the beef with two forks and return it to the pot to absorb flavors.
- Warm corn tortillas on a skillet; fill each tortilla with shredded beef mixture and fold.
- Serve with small bowls of consomme for dipping, garnished with cilantro and lime.
