  • 4 medium yellow squashes (sliced)
  • 1 small onion (finely chopped)
  • 1 cup sharp cheddar cheese (shredded)
  • 1 cup sour cream
  • 2 large eggs (whisked)
  • 1 cup plain breadcrumbs
  • 4 tablespoons unsalted butter (melted)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Wash and slice the yellow squashes into thin rounds.
  3. In a skillet, melt 2 tablespoons of butter over medium heat. Sauté the onion until translucent, about 5 minutes. Add squash slices and cook until slightly softened.
  4. In a mixing bowl, combine sautéed vegetables with cheddar cheese, sour cream, and eggs until well mixed.
  5. In another bowl, combine breadcrumbs with remaining melted butter. Sprinkle this mixture over the casserole.
  6. Pour the mixture into a greased baking dish and bake for 30-35 minutes or until golden brown on top.
