- 3–4 boneless, skinless chicken breasts (about 1 lb)
- 2 (15 oz) cans cannellini beans, rinsed and drained
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 4 cups low-sodium chicken broth
- 2 tsp cumin powder
- 2 tsp chili powder
- Fresh cilantro (optional, for garnish)
- Lime wedges (optional, for serving)
Instructions
- Prepare your ingredients by chopping the onion and mincing the garlic.
- In a large pot over medium heat, add 2 tbsp olive oil and sauté the chicken breasts until browned on both sides (about 6-8 minutes). Remove and set aside.
- In the same pot, add the chopped onions and minced garlic. Sauté until onions are translucent (about 5 minutes).
- Stir in cumin powder and chili powder along with the rinsed cannellini beans.
- Pour in the chicken broth while scraping any brown bits from the bottom. Return chicken to the pot and bring to a simmer for about 20 minutes.
- Taste and adjust seasoning if needed before serving. Ladle into bowls, garnish with cilantro, and serve with lime wedges.
