  • 3–4 boneless, skinless chicken breasts (about 1 lb)
  • 2 (15 oz) cans cannellini beans, rinsed and drained
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 4 cups low-sodium chicken broth
  • 2 tsp cumin powder
  • 2 tsp chili powder
  • Fresh cilantro (optional, for garnish)
  • Lime wedges (optional, for serving)

Instructions

  1. Prepare your ingredients by chopping the onion and mincing the garlic.
  2. In a large pot over medium heat, add 2 tbsp olive oil and sauté the chicken breasts until browned on both sides (about 6-8 minutes). Remove and set aside.
  3. In the same pot, add the chopped onions and minced garlic. Sauté until onions are translucent (about 5 minutes).
  4. Stir in cumin powder and chili powder along with the rinsed cannellini beans.
  5. Pour in the chicken broth while scraping any brown bits from the bottom. Return chicken to the pot and bring to a simmer for about 20 minutes.
  6. Taste and adjust seasoning if needed before serving. Ladle into bowls, garnish with cilantro, and serve with lime wedges.
