- 3–4 boneless, skinless chicken breasts
- 8 oz penne pasta
- 2 cups fresh spinach
- 1 cup heavy cream
- 1 cup freshly grated Parmesan cheese
- 4 garlic cloves, minced
- 1/2 cup fresh basil, chopped
- 2 tbsp extra virgin olive oil
- Salt and pepper to taste
Instructions
- Cook the penne pasta in salted boiling water until al dente (about 8-10 minutes). Drain and set aside.
- In a skillet over medium heat, add olive oil and sauté seasoned chicken breasts for about 6-7 minutes per side until golden brown. Remove from skillet.
- In the same skillet, add minced garlic; sauté for 30 seconds. Add spinach and stir until wilted (about 1 minute).
- Pour in heavy cream, scraping the pan to incorporate flavors; simmer for 3-5 minutes until thickened.
- Slice the chicken and return it to the skillet with the drained pasta and Parmesan cheese; toss until well combined.
