- 8 oz cream cheese, softened
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/4 cup fresh basil, chopped
- 1/4 cup fresh thyme, chopped
- 1 pre-made pie crust
- 2 large eggs, room temperature
- 1 onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons olive oil
- Salt to taste
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
- While onions and garlic are cooking, slice tomatoes and sprinkle with salt. Let sit in a colander for 15 minutes to remove excess moisture.
- In a bowl, beat softened cream cheese with eggs until smooth. Stir in shredded cheeses, sautéed onions and garlic, and fresh herbs.
- Gently fold in prepared tomatoes into the mixture without breaking them apart too much. Pour the filling into the pie crust.
- Bake for 35-40 minutes or until golden brown on top and set in the center. Allow to cool slightly before slicing.
