  • 2 cups ripe tomatoes, sliced
  • 8 oz cream cheese, softened
  • 1 cup shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/4 cup fresh basil, chopped
  • 1/4 cup fresh thyme, chopped
  • 1 pre-made pie crust
  • 2 large eggs, room temperature
  • 1 onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons olive oil
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet over medium heat, sauté the chopped onion in olive oil until translucent (about 5 minutes). Add minced garlic and cook for an additional minute.
  3. While onions and garlic are cooking, slice tomatoes and sprinkle with salt. Let sit in a colander for 15 minutes to remove excess moisture.
  4. In a bowl, beat softened cream cheese with eggs until smooth. Stir in shredded cheeses, sautéed onions and garlic, and fresh herbs.
  5. Gently fold in prepared tomatoes into the mixture without breaking them apart too much. Pour the filling into the pie crust.
  6. Bake for 35-40 minutes or until golden brown on top and set in the center. Allow to cool slightly before slicing.
