  • 4 tilapia fillets (about 1 lb)
  • 2 large red bell peppers (sliced)
  • 4 cloves garlic (minced)
  • 1 medium onion (chopped)
  • 2 tbsp extra virgin olive oil
  • Salt & pepper (to taste)
  • Juice of 1 lemon
  • Fresh basil leaves (for garnish)

Instructions

  1. Preheat the oven to 425°F (220°C). Wash and slice the red bell peppers into strips, discarding seeds and stems. Chop the onion and mince the garlic.
  2. Toss sliced bell peppers with 1 tablespoon of olive oil and salt on a baking sheet. Roast for about 20 minutes until tender and slightly caramelized.
  3. In a large skillet over medium heat, add the remaining tablespoon of olive oil. Sauté chopped onions until soft (about 5 minutes), then add minced garlic for an additional minute.
  4. Stir in the roasted peppers, salt, pepper, and lemon juice to the skillet. Let everything cook together for another 3-5 minutes.
  5. Gently place tilapia fillets into the skillet among the veggies. Cover and cook for approximately 6-8 minutes until fish flakes easily with a fork.
  6. Sprinkle fresh basil over the top before serving. Enjoy hot over rice or alongside crusty bread.
