  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) garbanzo beans, drained and rinsed
  • 1 medium onion, chopped
  • 1 cup bell peppers, chopped (mixed colors)
  • 2 cloves garlic, minced
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1 cup shredded sharp cheddar cheese
  • 2 tsp cumin
  • 2 tsp chili powder
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add chopped onion and bell peppers; sauté for about 5 minutes until softened.
  2. Stir in minced garlic, cumin, and chili powder; cook until fragrant.
  3. Add the black beans, kidney beans, garbanzo beans, and fire-roasted diced tomatoes. Mix well and let simmer for about 10 minutes.
  4. Preheat your oven to 375°F (190°C). Transfer the mixture into a greased baking dish and spread evenly.
  5. Top with shredded cheddar cheese and bake for 25-30 minutes until bubbly and golden brown.
