- 3–4 lbs chuck roast
- 2 medium yellow onions, sliced
- 4–5 cloves garlic, minced
- 1/4 cup brown sugar
- 1 cup low-sodium beef broth
- 1/4 cup low-sodium soy sauce
- 2 tbsp apple cider vinegar
- 1 tsp ground cumin
- 1 tsp paprika
- Salt & pepper to taste
Instructions
- Trim excess fat from the chuck roast and season with salt and pepper.
- Sear the roast in a skillet over medium-high heat until browned on all sides, about 5 minutes per side.
- Sauté sliced onions in the same skillet until translucent, then add minced garlic.
- In a bowl, whisk together brown sugar, soy sauce, cider vinegar, cumin, paprika, and beef broth. Pour over the seared roast in the slow cooker.
- Cook on low for 8 hours or high for about 4 hours until tender.
- Shred the beef with two forks and return it to the cooking liquid before serving.
