  • 34 lbs chuck roast
  • 2 medium yellow onions, sliced
  • 45 cloves garlic, minced
  • 1/4 cup brown sugar
  • 1 cup low-sodium beef broth
  • 1/4 cup low-sodium soy sauce
  • 2 tbsp apple cider vinegar
  • 1 tsp ground cumin
  • 1 tsp paprika
  • Salt & pepper to taste

Instructions

  1. Trim excess fat from the chuck roast and season with salt and pepper.
  2. Sear the roast in a skillet over medium-high heat until browned on all sides, about 5 minutes per side.
  3. Sauté sliced onions in the same skillet until translucent, then add minced garlic.
  4. In a bowl, whisk together brown sugar, soy sauce, cider vinegar, cumin, paprika, and beef broth. Pour over the seared roast in the slow cooker.
  5. Cook on low for 8 hours or high for about 4 hours until tender.
  6. Shred the beef with two forks and return it to the cooking liquid before serving.
