  • 4 medium sweet potatoes (about 1.5 lbs), peeled and chopped
  • 1 lb ground beef or lamb
  • 1 medium onion, finely chopped
  • 2 medium carrots, diced
  • 1 cup frozen peas
  • 1 cup low-sodium vegetable broth
  • 2 tbsp olive oil
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper, to taste
  • 2 tbsp butter (for mashing)
  • ¼ cup milk (for mashing)

Instructions

  1. Boil sweet potatoes in salted water until fork-tender (about 15 minutes). Drain and mash with butter and milk; season with salt.
  2. In a skillet over medium heat, sauté onion and carrots in olive oil until softened (5-7 minutes). Add ground meat; cook until browned.
  3. Stir in peas, thyme, rosemary, salt, pepper, and vegetable broth; simmer for 5-10 minutes until thickened.
  4. Preheat oven to 400°F (200°C). Spread meat mixture in a baking dish and top with mashed sweet potatoes; smooth evenly.
  5. Bake for 25-30 minutes until golden brown on top. Let cool slightly before serving.
