  • 1 cup all-purpose flour
  • 1 cup milk (or plant-based alternative)
  • 2 large eggs
  • 2 tsp baking powder

  • 1/4 tsp salt
  • 2 tbsp butter or oil for frying

Instructions

  1. Peel and dice sweet potatoes into small chunks. Boil in salted water until tender (15-20 minutes), then drain and mash.
  2. In a large bowl, combine mashed sweet potatoes, flour, baking powder, cinnamon, salt, milk, and eggs. Stir until just combined.
  3. Heat a non-stick skillet over medium heat and add butter or oil. Pour batter onto the skillet in desired sizes.
