  • 1 cup fresh or frozen peas
  • 3 cloves garlic
  • 1/2 cup grated Parmesan cheese (or nutritional yeast for vegan)
  • 1/4 cup toasted pine nuts (or walnuts/sunflower seeds)
  • 1/2 cup extra virgin olive oil
  • Juice of 1 lemon
  • Salt and pepper to taste

Instructions

  1. 1. Boil salted water in a large pot and cook pasta until al dente; drain.
  2. 2. Blanch peas in boiling water for 2-3 minutes until vibrant green; drain.
  3. 3. In a food processor, blend blanched peas, garlic, pine nuts, Parmesan cheese, lemon juice, salt, and pepper. Gradually add olive oil until creamy.
  4. 4. Toss hot pasta with pesto; use reserved pasta water if needed to adjust consistency.
