  • 8 oz spaghetti or penne
  • 1 cup oil-packed sun-dried tomatoes, chopped
  • 3 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup grated Parmesan cheese
  • ¼ cup fresh basil leaves, for garnish
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta: Boil salted water in a large pot. Add 8 oz of spaghetti or penne and cook until al dente (about 8-10 minutes). Drain and reserve some pasta water.
  2. 2. Sauté: In a large skillet, heat 2 tbsp of olive oil over medium heat. Add minced garlic and chopped sun-dried tomatoes; sauté for 1-2 minutes until fragrant.
  3. 3. Creamy sauce: Pour in 1 cup of heavy cream while stirring continuously. Gradually add in 1 cup of grated Parmesan cheese until it thickens slightly.
  4. 4. Combine: Toss the cooked pasta into the skillet with the sauce, mixing well to coat. Use reserved pasta water if needed to achieve desired consistency.
  5. 5. Serve: Remove from heat, garnish with fresh basil leaves and additional Parmesan cheese. Enjoy warm!
