  • 3 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cups romaine lettuce (chopped)
  • 1/2 cup Caesar dressing (creamy)
  • 1/2 cup Parmesan cheese (shredded)
  • 4 large flour tortillas
  • 1 cup cherry tomatoes (halved)
  • Salt and pepper to taste

Instructions

  1. Preheat grill or skillet over medium heat. Season chicken breasts with salt and pepper. Grill for 6-7 minutes per side until cooked through.
  2. Let the chicken rest for 5 minutes before slicing into thin strips.
  3. While the chicken cools, wash and chop romaine lettuce and halve the cherry tomatoes.
  4. Lay out tortillas on a clean surface. Spread Caesar dressing on each tortilla, then layer with lettuce, sliced chicken, tomatoes, and Parmesan cheese.
  5. Roll tortillas tightly from one end to another, tucking in the sides as you go. Cut in half diagonally if desired.
