  • 4 boneless, skinless chicken breasts
  • 2 cups fresh spinach
  • 1 cup ricotta cheese
  • 1/2 cup sun-dried tomatoes (packed in oil)
  • 2 cloves garlic (minced)
  • 2 tsp olive oil (for sautéing)
  • 1 cup low-sodium chicken broth
  • Salt and pepper to taste
  • Optional: paprika for seasoning

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant, then add spinach until wilted.
  3. In a bowl, mix the sautéed spinach with ricotta cheese and chopped sun-dried tomatoes. Season with salt and pepper.
  4. Cut pockets into each chicken breast and season inside and out with salt, pepper, and paprika.
  5. Stuff each pocket generously with the filling mixture and secure with toothpicks if desired.
  6. Sear each breast in an oven-safe skillet over medium-high heat for about 3 minutes per side until golden brown.
  7. Transfer the skillet to the oven and bake for approximately 25 minutes or until cooked through.
  8. For the sauce, deglaze the skillet with chicken broth after removing from the oven, scraping up any browned bits.
