  • 2 tablespoons olive oil (plus extra for searing)
  • Salt and pepper to taste
  • 1 tablespoon fresh thyme, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon balsamic vinegar

Instructions

  1. Preheat oven to 425°F (220°C).
  2. In a skillet, heat olive oil over medium heat. Sauté garlic until fragrant. Add mushrooms and spinach; cook until wilted.
  3. In a bowl, combine sautéed vegetables, bread crumbs, Parmesan cheese, thyme, rosemary, salt, and pepper.
  4. Trim the beef tenderloin and butterfly it lengthwise to create a pocket.
  5. Stuff the pocket with the filling and secure it with kitchen twine or toothpicks.
  6. Sear the stuffed tenderloin in an oven-safe skillet over high heat until browned on all sides (3-4 minutes each side).
  7. Transfer the skillet to the oven and roast for 20-25 minutes until internal temperature reaches 135°F (57°C) for medium-rare.
