  • 1/2 cup unsalted butter (cold, cut into cubes)
  • 1 cup fresh strawberries (diced)
  • 1 cup rhubarb (diced)
  • 3/4 cup granulated sugar (for filling)
  • 1 tbsp lemon juice
  • 2 large eggs
  • 1 tsp baking powder
  • 1 tbsp cornstarch

Instructions

  1. Preheat oven to 350°F (175°C) and grease an 8×8 inch baking dish.
  2. In a bowl, mix flour, sugar, and salt. Incorporate cold butter until the mixture resembles coarse crumbs.
  3. Press the crust mixture into the prepared dish and bake for 15 minutes until golden.
  4. In another bowl, combine diced strawberries, rhubarb, sugar, lemon juice, and cornstarch for the filling.

  6. Bake again for 30-35 minutes until bubbly and golden brown on top.
