  • 2 lbs pork belly
  • 2 tbsp fresh ginger, minced
  • 4 garlic cloves, whole
  • 1/2 cup brown sugar (or coconut sugar)
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup rice vinegar
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C). Score the skin of the pork belly in a crisscross pattern and season generously with salt and pepper.
  2. In a bowl, mix soy sauce, ginger, garlic, brown sugar, and rice vinegar. Marinate the pork belly in this mixture for at least one hour (overnight is best).
  3. Heat oil in an oven-safe skillet over medium-high heat. Sear the pork belly skin-side down until golden brown (about 5 minutes).
  4. Flip the pork belly skin-side up and pour half of the marinade into the pan. Cover tightly with foil or a lid and bake for about 2 hours until fork-tender.
  5. Remove from the oven, brush with reserved marinade, increase temperature to 400°F (200°C), and roast uncovered for another 15-20 minutes until caramelized.
  6. Allow to rest for 10 minutes before slicing and serving hot.
