  • 1 cup baby spinach
  • 1 cup asparagus (chopped)
  • 1 cup bell peppers (diced)
  • 4 large eggs
  • 1 cup whole milk
  • 3/4 cup feta cheese (crumbled)
  • Salt and pepper to taste
  • 1 tsp dried thyme (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). If using a frozen pie crust, let it thaw slightly before pressing into the pie pan.
  2. In a skillet over medium heat, add olive oil and sauté diced bell peppers until softened. Add chopped asparagus and spinach until just wilted.
  3. In a bowl, whisk together eggs and milk until smooth. Stir in sautéed vegetables, salt, pepper, and crumbled feta.
  4. Pour the vegetable-egg mixture into the prepared pie crust evenly.
  5. Bake for 35-40 minutes until edges are golden brown and center is set. Insert a knife to check doneness; it should come out clean.
  6. Allow to cool slightly before slicing. Serve warm or at room temperature.
