  • 1 pound fresh spinach
  • 1 cup heavy cream
  • 1 cup freshly grated Parmesan cheese (divided)
  • 2 tablespoons butter
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 cup panko breadcrumbs
  • ½ cup chopped walnuts or almonds (toasted)
  • Salt & pepper (to taste)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a large skillet over medium heat, melt the butter and sauté the onions until translucent (about 5 minutes). Stir in minced garlic until fragrant.
  3. Add the fresh spinach to the skillet and cook until wilted (approximately 3 minutes).
  4. In a bowl, mix heavy cream with half of the grated Parmesan cheese. Pour into the skillet, stirring until well combined. Season with salt and pepper.
  5. Transfer the mixture to a greased baking dish. Top with remaining Parmesan cheese, breadcrumbs, and chopped nuts.
  6. Bake in the preheated oven for 25-30 minutes until bubbly and golden brown. Let cool slightly before serving.
