  • 1 can (13.5 oz) full-fat coconut milk
  • 14 oz firm tofu, pressed and cubed
  • 4 cloves garlic, minced
  • 1 medium onion, chopped
  • 2 tsp curry powder
  • 1 inch fresh ginger, grated
  • 2 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. Press the tofu between paper towels for 15 minutes, then cut into cubes.
  2. In a large pan over medium heat, sauté chopped onions and minced garlic until translucent (3-4 minutes).
  3. Add fresh spinach and cook until wilted (2-3 minutes).
  4. Pour in coconut milk, grated ginger, and curry powder; simmer on low for 10 minutes.
  5. In another pan, heat oil over medium-high heat and fry the cubed tofu until golden brown (5-7 minutes).
  6. Gently mix crispy tofu into the spinach curry sauce; let simmer for another 2-3 minutes before serving.
