  • ¾ cup granulated sugar
  • 2 large eggs (room temperature)
  • ½ cup whole milk (or almond milk)
  • ½ cup brewed chai tea (strong)
  • ½ cup unsalted butter (softened)
  • For the Frosting:
  • ½ cup unsalted butter (softened)
  • 2 cups powdered sugar
  • ¼ cup brewed chai tea concentrate

Instructions

  1. Preheat the oven to 350°F (175°C) and line cupcake tins with liners.
  2. In a bowl, whisk together flour, baking powder, cinnamon, ginger, nutmeg, and sugar until well combined.
  3. In another bowl, cream together softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Gradually mix in brewed chai tea and milk until just combined.
  5. Fold dry ingredients into wet mixture gently to retain airiness.
  6. Fill cupcake liners two-thirds full and bake for 15-18 minutes or until a toothpick comes out clean.
  7. Allow cupcakes to cool completely on wire racks before frosting.
  8. For frosting, beat softened butter with powdered sugar until fluffy; gradually add chai concentrate until desired consistency is achieved and frost cooled cupcakes.
