  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1/2 cup tomato sauce
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 bell pepper (any color), diced
  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium heat. Sauté diced onion for about 3-4 minutes until translucent.
  2. Add minced garlic and diced bell pepper; sauté for an additional 2-3 minutes until fragrant.
  3. Stir in rinsed long-grain rice, cumin, and smoked paprika; cook for 1-2 minutes until the rice is well-coated and slightly toasted.
  4. Pour in vegetable broth and tomato sauce; stir to combine and bring to a gentle simmer.
  5. Cover and reduce heat to low; simmer for 20-25 minutes or until all liquid is absorbed.
  6. Remove from heat and let sit for 5 minutes before fluffing with a fork.
