  • 2 cups yellow squash, sliced
  • 2 cups zucchini, sliced
  • 1 medium onion, finely chopped
  • 1 cup sharp cheddar cheese, shredded (divided)
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1 cup sour cream
  • 2 tbsp butter, melted
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Sauté onions in melted butter until translucent (about 5 minutes). Add sliced squash and zucchini; cook until softened (8–10 minutes).
  3. In a bowl, whisk together eggs, sour cream, salt, pepper, and half the cheddar cheese.
  4. Combine sautéed veggies with the egg mixture until well coated. Pour into a greased baking dish and top with remaining cheese and breadcrumbs.
  5. Bake for 30–35 minutes until bubbly and golden brown. Allow to cool slightly before serving.
