- 1 cup unsalted butter (cold, cubed)
- 1/2 tsp salt
- 6–8 tbsp ice water
Instructions
- Prepare the pie crust by mixing flour and salt in a bowl. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until dough forms. Chill for at least 30 minutes.
- Preheat oven to 425°F (220°C). In another bowl, toss sliced peaches with sugar, cinnamon, nutmeg, and flour.
- Roll out half of the chilled dough and place it in a 9-inch pie dish. Fill with peach mixture.
- Roll out remaining dough; cover the filling and cut slits for ventilation or create a lattice design.
- Bake for 45-50 minutes until golden brown. Cool before serving.
