  • 5 cups fresh peaches (sliced)
  • 1 cup granulated sugar
  • 2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 3 tbsp all-purpose flour (for filling)
  • 2 1/2 cups all-purpose flour (for crust)
  • 1 cup unsalted butter (cold, cubed)
  • 1/2 tsp salt
  • 68 tbsp ice water

Instructions

  1. Prepare the pie crust by mixing flour and salt in a bowl. Cut in cold butter until it resembles coarse crumbs. Gradually add ice water until dough forms. Chill for at least 30 minutes.
  2. Preheat oven to 425°F (220°C). In another bowl, toss sliced peaches with sugar, cinnamon, nutmeg, and flour.
  3. Roll out half of the chilled dough and place it in a 9-inch pie dish. Fill with peach mixture.
  4. Roll out remaining dough; cover the filling and cut slits for ventilation or create a lattice design.
  5. Bake for 45-50 minutes until golden brown. Cool before serving.
