  • 1 ½ cups all-purpose flour
  • 1 cup diced fresh apples (preferably Granny Smith)
  • 2 tbsp extra virgin olive oil
  • 2 tbsp honey
  • 1 tsp cinnamon
  • ½ tsp sea salt
  • ¾ cup lukewarm water

Instructions

  1. In a large bowl, combine the sourdough starter and lukewarm water until smooth. Gradually add in the flour to form a shaggy dough.
  2. Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
  3. Gently fold in the diced apples, honey, and cinnamon until evenly incorporated.
  4. Place the dough in an oiled bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.
  5. Punch down the risen dough on a floured surface and shape it into a rectangle about 1-inch thick. Transfer to an oiled baking sheet.
  6. Create dimples with your fingers on top of the focaccia, drizzle with olive oil, and sprinkle with sea salt.
  7. Preheat your oven to 400°F (200°C). Bake for 25-30 minutes or until golden brown.
