- ¾ cup lukewarm water

- In a large bowl, combine the sourdough starter and lukewarm water until smooth. Gradually add in the flour to form a shaggy dough.
- Knead the dough on a floured surface for about 10 minutes until it becomes smooth and elastic.
- Gently fold in the diced apples, honey, and cinnamon until evenly incorporated.
- Place the dough in an oiled bowl, cover with a damp cloth, and let it rise at room temperature for 4-6 hours or until doubled in size.
- Punch down the risen dough on a floured surface and shape it into a rectangle about 1-inch thick. Transfer to an oiled baking sheet.
- Create dimples with your fingers on top of the focaccia, drizzle with olive oil, and sprinkle with sea salt.
- Preheat your oven to 400°F (200°C). Bake for 25-30 minutes or until golden brown.
