  • 6 cups cubed sourdough bread
  • 1 cup canned artichoke hearts (well-drained)
  • 1 medium onion (chopped)
  • 2 stalks celery (chopped)
  • 3 cloves garlic (minced)
  • 2 cups vegetable broth
  • 1 tablespoon fresh or dried sage
  • 1 tablespoon fresh or dried thyme
  • 2 large eggs
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium heat, melt 2 tablespoons of butter. Sauté the chopped onions and celery until translucent, then add the minced garlic for the last minute.
  3. In a large bowl, combine the cubed sourdough bread with the sautéed vegetables, artichokes, sage, thyme, salt, and pepper.
