  • 2 cups grated zucchini (about 2 medium zucchinis)
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • ½ cup brown sugar
  • 1 tsp baking powder
  • 2 tsp ground cinnamon
  • 2 large eggs (room temperature)
  • 1 tsp vanilla extract
  • ½ cup vegetable oil

Instructions

  1. Preheat oven to 350°F (175°C) and grease a standard loaf pan.
  2. Grate zucchini and place it on a clean towel to remove excess moisture.
  3. In a large bowl, mix flour, baking powder, cinnamon, granulated sugar, and brown sugar.
  4. In another bowl, beat eggs, vanilla extract, and grated zucchini until smooth.
  5. Fold the wet mixture into the dry ingredients until just combined; do not overmix.
  6. Pour batter into the prepared loaf pan and bake for 50-60 minutes or until a toothpick comes out clean.
  7. Cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
