- 1 cup mini marshmallows
- ½ cup graham cracker crumbs
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, cream together the butter, brown sugar, and granulated sugar until light and fluffy.
- Add the egg and vanilla extract; mix until well combined.
- In another bowl, whisk together flour, baking soda, salt, and graham cracker crumbs. Gradually incorporate dry ingredients into the wet mixture until just combined.
- Fold in chocolate chips and mini marshmallows.
- Chill dough for 30 minutes in the refrigerator.
- Scoop tablespoonfuls of dough onto prepared baking sheets; create an indentation in half of them and fill with extra marshmallows before topping with another scoop.
- Bake for 10–12 minutes or until edges are golden brown but centers remain soft.
- Cool on the baking sheet for five minutes before transferring to wire racks.
