  • 6 boneless, skinless chicken thighs
  • 3 cloves garlic, minced
  • 4 green onions, chopped (plus extra for garnish)
  • 2 tbsp Sriracha sauce (adjust for spice preference)
  • 1/2 cup mayonnaise
  • 1 tbsp honey
  • 2 tbsp fresh lemon juice
  • 2 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup low-sodium soy sauce
  • 1 tbsp cornstarch
  • 2 tbsp water

Instructions

  1. Pat chicken thighs dry with paper towels and season with salt and pepper.
  2. In a large skillet over medium-high heat, add olive oil. Once shimmering, add chicken thighs skin-side down and cook for 5-7 minutes until golden brown.
  3. Flip chicken, add minced garlic, and sauté for about 30 seconds until fragrant.
  4. In a bowl, whisk together mayonnaise, Sriracha, honey, lemon juice, soy sauce, cornstarch mixed with water. Pour this mixture over the chicken in the skillet.
  5. Cover and simmer on medium-low heat for 10-12 minutes until chicken reaches an internal temperature of 165°F (75°C).
  6. Garnish with chopped green onions before serving.
