  • 1 medium sweet onion, chopped
  • 3 cloves garlic, minced
  • 2 tsp Dijon mustard
  • 1 tsp fresh thyme (or 0.5 tsp dried)
  • 1/4 tsp cinnamon
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Prepare ingredients by chopping the onion and mincing the garlic.
  2. In a large skillet, heat olive oil over medium-high heat. Sear chicken breasts until golden brown, about 5-7 minutes per side.
  3. Remove chicken; add onions and garlic to the skillet and sauté until translucent (about 4 minutes).
  4. Pour in apple cider, scraping up browned bits from the pan.
  5. Stir in Dijon mustard, thyme, cinnamon, salt, and pepper. Simmer for 10-15 minutes until sauce thickens.
  6. Return chicken to skillet; spoon sauce over it and cook until heated through (165°F internal temperature).
