  • 8 oz rice noodles
  • 1 cup bell peppers, thinly sliced (mix of red and yellow)
  • 1 cup cucumber, thinly sliced
  • 1 cup carrots, grated
  • 1/2 cup green onions, chopped
  • 1/4 cup cilantro, chopped (optional)
  • 3 tbsp dark sesame oil
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp fresh lime juice
  • 1 tbsp honey or maple syrup

Instructions

  1. 1. Boil a large pot of water and cook rice noodles according to package instructions until tender (about 3-5 minutes). Drain and rinse under cold water.
  2. 2. While noodles cool, slice the bell peppers, cucumber, and carrots. Chop the green onions and cilantro.
  3. 3. In a bowl, whisk together sesame oil, soy sauce, lime juice, and honey/maple syrup until well combined.
  4. 4. In a large bowl, combine cooled noodles with chopped veggies. Drizzle dressing over the top and toss gently until everything is well coated.
  5. 5. Serve immediately or chill for about half an hour to enhance flavors.
