- 1 cup carrots, grated
- 1/2 cup green onions, chopped
- 1/4 cup cilantro, chopped (optional)
- 3 tbsp dark sesame oil
- 3 tbsp low-sodium soy sauce
- 2 tbsp fresh lime juice
- 1 tbsp honey or maple syrup
Instructions
- 1. Boil a large pot of water and cook rice noodles according to package instructions until tender (about 3-5 minutes). Drain and rinse under cold water.
- 2. While noodles cool, slice the bell peppers, cucumber, and carrots. Chop the green onions and cilantro.
- 3. In a bowl, whisk together sesame oil, soy sauce, lime juice, and honey/maple syrup until well combined.
- 4. In a large bowl, combine cooled noodles with chopped veggies. Drizzle dressing over the top and toss gently until everything is well coated.
- 5. Serve immediately or chill for about half an hour to enhance flavors.
