  • 6 cups day-old French bread, torn into pieces
  • 2 cups leeks, sliced (white and light green parts only)
  • 2 cups Gruyère cheese, grated
  • 4 large eggs
  • 1 cup whole milk
  • 1 cup heavy cream
  • 2 tbsp fresh thyme or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a large baking dish.
  2. In a skillet over medium heat, melt butter and sauté the leeks until soft and translucent (5-7 minutes).
  3. In a bowl, whisk together eggs, milk, cream, salt, and pepper until smooth.
  4. Place torn bread pieces in the baking dish. Layer with sautéed leeks and half of the Gruyère cheese.
  5. Pour the custard mixture over the bread and gently press down to soak.
  6. Top with remaining Gruyère cheese and bake for 40-45 minutes until golden brown.
