  • 12 large button mushrooms
  • 1 lb sweet Italian sausage
  • 1 cup creamy Gorgonzola cheese (crumbled)
  • 1/2 cup plain breadcrumbs
  • 1/4 cup fresh parsley (chopped)
  • 2 cloves garlic (minced)
  • 2 tbsp olive oil
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Preheat oven to 375°F (190°C). Clean mushrooms with a damp cloth and remove stems carefully.
  2. In a skillet over medium heat, heat olive oil. Sauté chopped mushroom stems and garlic for about 3 minutes until fragrant.
  3. Add crumbled sausage to the skillet; cook until browned, breaking it into small pieces.
  4. Remove from heat; mix in Gorgonzola, breadcrumbs, parsley, salt, and pepper until well combined.
  5. Generously stuff each mushroom cap with the filling and place on a parchment-lined baking sheet. Top with grated Parmesan.
  6. Bake for 20 minutes or until golden brown.
