Ingredients

Scale
  • 1 sheet puff pastry (thawed)
  • 2 salmon fillets (6 oz each)
  • 4 oz cream cheese (softened)
  • 2 tbsp fresh dill or parsley (chopped)

  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Roll out the thawed puff pastry on a lightly floured surface until about ¼ inch thick; cut into squares large enough to wrap around the salmon fillets.
  3. In a bowl, combine cream cheese, chopped herbs, lemon zest, salt, and pepper until smooth.
  4. Place each salmon fillet on a square of pastry, top with the cream cheese mixture, then fold and seal the pastry around the salmon.
  5. Brush each Wellington with the beaten egg to achieve a golden finish.
  6. Bake on a parchment-lined baking sheet for 20-25 minutes or until golden brown and puffed.
  7. Allow to cool slightly before serving.
