  • 3 tbsp extra virgin olive oil
  • Juice of 2 limes
  • 1 tsp ground cumin
  • Salt and pepper to taste

Instructions

  2. Roast for 25-30 minutes until tender and caramelized.
  3. In a large bowl, combine black beans, red onion, bell peppers, and cilantro.
  4. Once sweet potatoes are roasted and cooled slightly, fold them into the bean mixture.
  5. In a small bowl, whisk together olive oil, lime juice, cumin, salt, and pepper. Drizzle over the salad and toss gently to combine.
