  • 4 bone-in lamb chops (about 1 inch thick)
  • 1 cup fresh mint leaves
  • 3 garlic cloves, minced
  • 2 tbsp pine nuts, lightly toasted
  • 1/4 cup extra virgin olive oil
  • 1/2 tsp sea salt (adjust to taste)
  • 1/4 tsp black pepper (adjust to taste)
  • Juice of 1 lemon
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Gather all ingredients and finely chop garlic.
  2. In a food processor, blend mint leaves, garlic, pine nuts, Parmesan cheese, lemon juice, and olive oil until smooth. Season with salt and pepper.
  3. Pat lamb chops dry and season both sides with salt and pepper.
  4. Preheat oven to 400°F (200°C) while resting seasoned lamb chops at room temperature for 15 minutes.
  5. In an oven-safe skillet over medium-high heat, sear each chop for about 3-4 minutes per side until golden brown.
  6. Transfer the skillet to the preheated oven and roast for 10-12 minutes until internal temperature reaches 145°F (63°C) for medium-rare.
