- 1/2 cup tahini
- 2 cloves garlic
- 2 tbsp freshly squeezed lemon juice
- 3 tbsp extra virgin olive oil
- 1/2 tsp ground cumin
- Salt & pepper to taste
Instructions
- Preheat the oven to 400°F (200°C). Wrap beets in foil, drizzle with olive oil, sprinkle with salt, and roast for 45-60 minutes until tender. Allow cooling before peeling.
- Optionally, wrap garlic cloves in foil and roast alongside the beets for a milder flavor.
- In a food processor, combine peeled beets, tahini, roasted garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
- While blending, slowly drizzle in olive oil until creamy. Adjust consistency with water if needed.
- Taste and adjust seasoning as desired.
- Transfer to a serving bowl, drizzle with more olive oil if desired, and chill for at least 30 minutes before serving.
