Ingredients

  • 2 medium beets (about 8 oz)
  • 1/2 cup tahini
  • 2 cloves garlic
  • 2 tbsp freshly squeezed lemon juice
  • 3 tbsp extra virgin olive oil
  • 1/2 tsp ground cumin
  • Salt & pepper to taste

Instructions

  1. Preheat the oven to 400°F (200°C). Wrap beets in foil, drizzle with olive oil, sprinkle with salt, and roast for 45-60 minutes until tender. Allow cooling before peeling.
  2. Optionally, wrap garlic cloves in foil and roast alongside the beets for a milder flavor.
  3. In a food processor, combine peeled beets, tahini, roasted garlic, lemon juice, cumin, salt, and pepper. Blend until smooth.
  4. While blending, slowly drizzle in olive oil until creamy. Adjust consistency with water if needed.
  5. Taste and adjust seasoning as desired.
  6. Transfer to a serving bowl, drizzle with more olive oil if desired, and chill for at least 30 minutes before serving.
