  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 cloves fresh garlic, minced
  • 2 cups creamy queso cheese
  • 8 flour tortillas
  • 1 can (10 oz) enchilada sauce
  • 1 tsp cumin
  • 1 tsp chili powder
  • ¼ cup chopped cilantro

Instructions

  1. Preheat oven to 375°F (190°C) and spray a baking dish with nonstick cooking spray.
  2. In a large skillet over medium heat, cook seasoned chicken for about 6-7 minutes per side until golden brown and internal temperature reaches 165°F (75°C). Remove from skillet.
  3. Sauté minced garlic in the same skillet until fragrant (about 30 seconds). Shred the cooked chicken into bite-sized pieces and return to the skillet.
  4. Stir in queso cheese and spices until melted and creamy.
  5. Spread a layer of enchilada sauce at the bottom of the baking dish. Fill tortillas with the cheesy chicken mixture, roll them up tightly, and place seam-side down in the dish.
  6. Pour remaining enchilada sauce over the top and sprinkle with extra queso cheese. Bake uncovered for 20-25 minutes until bubbly and golden.
