  • 4 boneless, skinless chicken breasts
  • 1 cup cooked jasmine rice
  • 1 cup canned pumpkin puree
  • 2 cups fresh spinach, chopped
  • 1 small yellow onion, finely chopped
  • 4 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded
  • 1 tsp cinnamon
  • 1/2 tsp nutmeg
  • Salt and pepper to taste
  • 2 tbsp olive oil
  • 1/4 cup chicken broth

Instructions

  1. Preheat oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (3-4 minutes), then add garlic for another minute.
  3. In a bowl, mix cooked rice, pumpkin puree, spinach, sautéed onions and garlic, cheddar cheese, cinnamon, nutmeg, salt, and pepper until combined.
  4. Butterfly each chicken breast by slicing horizontally but not all the way through. Season with salt and pepper.
  5. Spoon the pumpkin rice mixture into each chicken pocket. Secure with toothpicks if necessary.
  6. Place stuffed chicken in the baking dish and bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
