- 4 boneless, skinless chicken breasts
- 1 cup cooked jasmine rice
- 1 cup canned pumpkin puree
- 2 cups fresh spinach, chopped
- 1 small yellow onion, finely chopped
- 4 cloves garlic, minced
- 1 cup sharp cheddar cheese, shredded
- 1 tsp cinnamon
- 1/2 tsp nutmeg
- Salt and pepper to taste
- 2 tbsp olive oil
- 1/4 cup chicken broth
Instructions
- Preheat oven to 375°F (190°C) and grease a baking dish.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent (3-4 minutes), then add garlic for another minute.
- In a bowl, mix cooked rice, pumpkin puree, spinach, sautéed onions and garlic, cheddar cheese, cinnamon, nutmeg, salt, and pepper until combined.
- Butterfly each chicken breast by slicing horizontally but not all the way through. Season with salt and pepper.
- Spoon the pumpkin rice mixture into each chicken pocket. Secure with toothpicks if necessary.
- Place stuffed chicken in the baking dish and bake for 25-30 minutes or until internal temperature reaches 165°F (74°C).
