  • 4 oz cream cheese (softened)
  • 1 tsp vanilla extract

Instructions

  2. In a bowl, whisk together flour, sugar, baking powder, cinnamon, nutmeg, and salt.
  3. In another bowl, mix pumpkin puree, eggs, vegetable oil, and vanilla until smooth.
  4. Gently fold the wet mixture into the dry ingredients until just combined.
  5. In a separate bowl, blend softened cream cheese with a bit of sugar and vanilla until smooth.
  6. Fill muffin cups two-thirds full with batter; add dollops of cream cheese mixture before topping with more batter.
  7. Bake for 20-25 minutes or until golden brown and a toothpick comes out clean.
