- 8 oz cream cheese, softened
- 1 cup plain Greek yogurt
- ½ cup natural peanut butter
- ¼ cup honey or maple syrup
- 2 tbsp melted coconut oil
- 1 tsp pure vanilla extract
- 1 cup graham cracker crumbs
- ¼ cup chopped pecans (optional)
Instructions
- Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted coconut oil. Press firmly into the bottom of paper-lined muffin tins.
- In a separate bowl, blend softened cream cheese until smooth. Mix in Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until creamy.
- Spoon the filling over each graham cracker base until nearly full.
- Bake for 15-20 minutes until slightly set but still jiggly in the center. Cool before refrigerating for at least two hours.
- Once chilled, top with additional peanut butter or chopped pecans before serving.
