Ingredients

  • 8 oz cream cheese, softened
  • 1 cup plain Greek yogurt
  • ½ cup natural peanut butter
  • ¼ cup honey or maple syrup
  • 2 tbsp melted coconut oil
  • 1 tsp pure vanilla extract
  • 1 cup graham cracker crumbs
  • ¼ cup chopped pecans (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, combine graham cracker crumbs and melted coconut oil. Press firmly into the bottom of paper-lined muffin tins.
  2. In a separate bowl, blend softened cream cheese until smooth. Mix in Greek yogurt, peanut butter, honey or maple syrup, and vanilla extract until creamy.
  3. Spoon the filling over each graham cracker base until nearly full.
  4. Bake for 15-20 minutes until slightly set but still jiggly in the center. Cool before refrigerating for at least two hours.
  5. Once chilled, top with additional peanut butter or chopped pecans before serving.
