  • 1 (5 lb) Prime Rib Roast
  • 2 tbsp Kosher Salt
  • 1 tbsp Freshly Ground Black Pepper
  • 6 Garlic Cloves, minced
  • 2 tbsp Fresh Rosemary, chopped
  • 2 tbsp Fresh Thyme, chopped
  • 2 tbsp Extra Virgin Olive Oil
  • 1 cup Low-Sodium Beef Broth

Instructions

  1. Preheat oven to 450°F (232°C) and let the prime rib sit at room temperature for 30 minutes.
  2. Season the roast generously with salt and pepper on all sides. Rub minced garlic all over the meat.
  3. Pat fresh rosemary and thyme onto the surface of the roast.
  4. Heat a roasting pan over medium-high heat and sear all sides of the roast for about 4-5 minutes until browned.
  5. Transfer the roast to the preheated oven and cook for 20 minutes at 450°F (232°C). Reduce the temperature to 325°F (163°C) and continue roasting for 1-1.5 hours or until it reaches an internal temperature of 135°F (57°C) for medium-rare.
  6. Remove from the oven, tent with foil, and let rest for at least 20 minutes before slicing.
