- 4 large bell peppers (any color)
- 1 lb thinly sliced ribeye or sirloin steak
- 1 medium onion, sliced
- 1 cup green bell pepper, finely chopped
- 1 cup mushrooms, sliced (optional)
- 1 cup provolone or Cheez Whiz
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Wash and slice the tops off the bell peppers; remove seeds.
- In a skillet over medium heat, add olive oil and sauté onions and green bell peppers for about 5 minutes until soft.
- Add thinly sliced steak; cook until browned and tender. Stir in mushrooms if using.
- Remove from heat; mix in cheese until melted. Season with salt and pepper.
- Stuff each pepper with the steak mixture and place upright on a parchment-lined baking sheet.
- Bake for 25-30 minutes or until peppers are tender. Serve warm.
