Ingredients

  • 1 lb thinly sliced ribeye or sirloin beef
  • 1 cup bell peppers (mixed red and green), sliced
  • 1 medium yellow onion, sliced
  • 8 oz provolone cheese or Cheez Whiz
  • 4 large flour tortillas
  • Salt and pepper to taste
  • 2 tsp olive oil

Instructions

  1. Heat olive oil in a skillet over medium-high heat. Sauté onions and bell peppers for about 5 minutes until soft.
  2. Add the sliced beef, season with salt and pepper, and cook for approximately 3 minutes until browned.
  3. Reduce heat, place cheese on top of the beef mixture, cover, and cook until melted (about 2 minutes).
  4. Warm tortillas briefly in another pan or microwave. Spoon beef mixture onto each tortilla and roll tightly.
  5. Optionally toast wraps in a skillet until crispy. Slice diagonally and serve hot with dipping sauces.
