  • 2 tablespoons granulated sugar
  • 8 ounces mascarpone cheese
  • 24 ladyfinger cookies
  • Unsweetened cocoa powder (for dusting)
  • Additional sugar to taste (optional)

Instructions

  1. Brew 1 cup of strong espresso coffee and let it cool slightly. Stir in the peppermint extract.
  2. In a large bowl, whip the heavy cream with granulated sugar until stiff peaks form (about 3-5 minutes).
  3. Gently fold in the mascarpone cheese into the whipped cream to maintain fluffiness.
  4. Dip each ladyfinger briefly in the espresso mixture and layer them in a dish.
  5. Spread half of the mascarpone mixture over the ladyfingers. Repeat with another layer of dipped ladyfingers and top with remaining mascarpone mix.
  6. Dust generously with cocoa powder and refrigerate for at least 4 hours or overnight before serving.
